Mussels baked sea bass in love

I am also fall into the trap of Valentine's Day? But nooo! A memory I do not think I ever celebrated, and what, to be honest, I do not mind at all, especially now that I found someone who is allergic as I am.
I am not speaking of romance, that's always welcome, although unexpected when it acquires more appeal, I talked about the day that was set on purpose because we all remember to say "I love you" and then flowers, hearts, chocolates, dinners is short, I do not want to be defeatist, but not feel a thing I, I I can attach to, even with advancing age.
Today at lunch abbaiamo opted for sea bass, after a Mexican dinner, something a little softer and we wanted to make it more attractive, I've added a bed of potatoes (with a cover) and a sprinkling di nocciole.

Serves 2:

2 medium-size bass
4 / 5 medium potatoes
2 handfuls of hazelnuts
rosemary, thyme, bay leaf oil
salt, pepper
Peel, wash and slice the potatoes very finely, arrange half in a baking dish, covered with aluminum foil, oiled. Sprinkle with hazelnuts, shelled and chopped previously. Season with salt and pepper.
the offal of the sea bass, season with salt, pepper and a bay leaf and lay on a bed of potatoes, on top of a sprig of rosemary.
Cover with more potatoes, exposing his head, season with salt and pepper and sprinkle with abundant hazelnuts. Garnish with a sprig of thyme.
Sprinkle, finally, with olive oil and bake for 35/40 minutes at 180 degrees.
