Okay not 'the recipe' in this complicated world. But it took me a while 'to find the best combination of speed' and temperature.


Ingredients 6 egg whites Pinch salt 1


Preparation
Arrange on the butterfly blades of the mixing bowl perfectly clean and fill the egg whites: 3 minutes at speed 3.
Make sure that there is no residual yolk and, for best results, set the temperature to 40 degrees.
