Jerusalem artichoke gnocchi with fava beans and shrimp cake with coconut and cherries

Last week I bought it for the first time, Jerusalem artichokes, I had seen in so many recipes around the blogosphere and, I must admit, I was quite intrigued.
It took me a week to decide to cook, but my brain had already decided that gnocchi were, moreover, they call it the potato of diabetics, so for me it could very well replace the potato in the dough.
doses are experimental, on the net I found recipes for gnocchi dough without the use of the potato, even in small ways, so you just try it.
Surely we can work a little bit about maybe cooking the artichokes to steam rather than boil it, so it does not absorb water, being liquid enough of his own, I added some flour and gnocchi allowed to stand for one night and the result is very good.













Ingredients for 4:

for the gnocchi:
300 g Jerusalem artichokes
250 g flour 00
for the sauce:
200 g of beans
150 g Jerusalem artichokes
8 large shrimp
milk taste
extra virgin olive oil
salt, pepper
Peel Jerusalem artichokes and wash (300 g +150 g) and boil in salted water. Drain well and pass in a crushing potatoes. Take 300 g, add flour and a pinch of salt and knead. The dough will be very soft and wet, however, do not overdo it with flour. Make the dumplings and let them rest on a work surface, previously well floured.
Boil the beans (I I used frozen) for about ten minutes in salted water, drain them and remove the peel.
Clean the prawns, depriving them of the head, carapace, and tail gut wire, cutting the back with a boxcutter, cut in chunks and add them to the beans in a pan with a little oil.
Boil water in a pot, add salt and dive into the dumplings. They are ready when they come to the surface. Drain with slotted spoon and cook them in a pan with the beans and shrimp.
Heat Finally, the remaining artichokes in a pan, mixed with a little milk, put the cream in a glass dish and lay the dumplings, sprinkle generously with freshly ground black pepper and serve.
